Raphaël opened a vinegar-making workshop in the olive-growing town of Nyons in 2004.
Since then he has produced a dozen varieties of vinegar with thyme, sage lavender etc., using traditional hand-made methods. Raphaël is passionate about gastronomy and also gives demonstrations and cookery lessons, teaching people all there is to know about which vinegar to serve with different dishes.
